Abstract

A motorized ginger juice expression machine (GJEM) was designed and developed using locally available materials. The developed machine was tested for juice yield, juice expression efficiency, juice expression loss and juice throughput capacity. Fresh ginger rhizomes at 78.69% moisture content was used for the test. The result revealed a juice yield, expression efficiency, expression loss and throughput capacity of 53.77 %, 78.78 %, 25.5% and 7.5kg/hr respectively. The GJEM is powered by a 3 hp single-phase electric motor and is affordable. Drying of ginger rhizome deteriorates the oleoresin content and hence, the value and quality of ginger. The motorized ginger juice expressing machine offers an affordable and simple method of processing fresh ginger without drying.
